Wagyu Samgyup at Home: Saikoro Cubes on the Tabletop Grill

Samgyup night is usually pork belly. Swap in wagyu cubes and the grill, the dips and the lettuce all stay the same. Only the timing gets shorter.

Wagyu samgyup at home means grilling Saikoro wagyu cubes on a tabletop grill plate the way you would pork belly, except each cube needs only 20 to 30 seconds a face and comes off medium-rare in about 1 to 2 minutes. Plan about 250 g per adult, so a ₱1,299 Foodlabo 1kg pack feeds four, then dip each piece in a sauce on the side and wrap it in lettuce or eat it over rice. Prices verified October 2026.

Samgyupsal is properly Korean pork belly, so this is a borrowed format, not the original dish. The grill, the dips and the lettuce all carry over. Only the timing changes.

What Do You Need for Wagyu Samgyup at Home?

A wagyu samgyup setup needs four things: a tabletop heat source, a grill plate with a grease channel, tongs, and thawed, dry cubes. A portable butane stove with a samgyup plate is what most Filipino households already own from pork belly nights, and an electric grill plate works the same way.

  • Thaw the pack overnight in the fridge, about 12 hours for a 500g pack, then pat every cube dry. Wet cubes steam on the plate instead of browning.
  • Salt just before grilling, and nothing else. Skip the samgyup marinades: marbled beef does not need them, and a wet surface will not brown.
  • Open a window. Wagyu fat renders fast and smokes more than you expect at grilling heat.
  • Use a plate that fits the burner. A plate that overhangs a butane stove's canister compartment traps heat over the can.

Can You Use Wagyu Cubes for Samgyup?

Yes, wagyu cubes work for samgyup, and they are easier to manage at the table than thin beef slices. Saikoro cubes are cut thick and bite-size, with marbling through each piece, so they brown outside and stay medium-rare inside instead of curling and overcooking in seconds the way thin-sliced beef does.

The trade-off is attention. Pork belly forgives a minute too long; a wagyu cube does not. Grill in small batches so everyone watches their own pieces, rather than loading the whole plate at once. The full pan method, including the four mistakes that waste a pack, is in how to cook Saikoro wagyu cubes.

How Much Wagyu Per Person for Samgyup?

For wagyu per person at a samgyup night, plan about 250 g of cubes per adult when the beef is the main thing on the grill. That makes a 500g pack dinner for two and a 1kg pack dinner for four, with rice and lettuce filling out the rest of the table.

PackCubesPriceFeeds at 250 g each
Foodlabo Saikoro Steak 500g30–35₱6892
NK Foods Beef Saikoro 500g40–45₱7692
Foodlabo Saikoro Steak 1kg70–75₱1,2994
NK Foods Beef Cubes 1kg85–95₱1,4994

NK Foods cubes run smaller, so you get more pieces to the kilo and each one cooks a few seconds faster. The 1kg Foodlabo Saikoro Steak pack is the cheapest per kilo of the four. Feeding a bigger group or grilling other meats alongside? How much steak per person covers the handaan math.

How Long Do You Grill Wagyu Cubes on a Samgyup Grill?

Grill wagyu cubes on a samgyup grill for about 20 to 30 seconds per face, turning with tongs, which comes to roughly 1 to 2 minutes for medium-rare. Preheat the plate on medium-high for 3 to 4 minutes first, so the cubes sizzle hard the moment they land.

  • Lay down only as many cubes as the table can watch, roughly six to eight at a time.
  • Push the cubes off the fat as it pools. Sitting in the grease channel, they poach instead of grill.
  • Pull them at 52 to 54°C if you probe one. Past medium, the marbling renders out and you have cooked away what you paid for.
  • Rest each batch a minute on a plate before eating. It keeps the juice in the first bite.

What Sauce Goes With Wagyu Samgyup?

The sauce that goes with wagyu samgyup belongs on the side for dipping, never poured over or used as a marinade. Our Special Homemade Wagyu Sauce (₱89, 120g) is made for exactly this, dipped per piece yakiniku style. Heinz A.1 Original Sauce (₱179) is the sharper option for cutting through the richness.

A small dish of salt, pepper and sesame oil is the classic samgyup dip, and it suits wagyu because it adds nothing that competes with the beef. Lettuce leaves, sliced garlic, kimchi and garlic rice fill out the rest. The cubes are rich enough that heavy sides go to waste. If the table would rather eat everything over rice, a wagyu rice bowl uses the same cubes and the same sauce at about 150 g a bowl.
