Pan Sauce From Steak Drippings: Don't Wash That Pan
The best thing in your kitchen right after the steak comes out is the brown stuff stuck to the pan. Here is what to do with it before it goes in the sink.

A pan sauce from steak drippings is the browned fond and rendered fat left in the pan after searing, loosened with a splash of liquid and finished with cold butter. It takes two minutes and needs no stock, no cream and no recipe, because the flavour is already stuck to the bottom of the pan and all you are doing is getting it back off. It works best after a lean, butter-aged cut like the ₱1,599 Classic Gold Ribeye, and it works badly after wagyu, which is the one honest catch. Prices verified September 2026.
What Goes Into a Pan Sauce From Steak Drippings?
A steak pan sauce needs four things: the fond stuck to the pan, a thin liquid to dissolve it, one aromatic, and cold butter to bind it at the end. Nothing else is required. The salt is usually already in there, carried over from the crust and the rendered fat, so taste before you add any more.
- The fond: the dark brown bits welded to the pan after a hard sear. That is the sauce. If your pan comes out clean and pale, it was never hot enough and there is nothing to make.
- The liquid: two to three tablespoons, no more. You are dissolving, not making soup.
- The aromatic: a smashed garlic clove, a few slices of onion, or a pinch of dried Thyme Leaves (₱79) in the last thirty seconds.
- The butter: one tablespoon, cold, stirred in off the heat. Cold butter emulsifies. Melted butter just floats.
What Do You Deglaze a Steak Pan With?
Deglaze a steak pan with any thin liquid you already have: water, beef or chicken stock, red wine, calamansi juice cut with water, or soy sauce thinned with water. Plain water genuinely works. The liquid's job is to dissolve the fond, not to flavour the sauce, so do not buy anything for this.
Pour off the excess fat first. Leave about a teaspoon in the pan and tip the rest into a cup, or the sauce turns into an oil slick. Put the pan back on medium heat, add your liquid, and scrape the bottom with a wooden spoon while it bubbles. Everything stuck should lift in about twenty seconds.
If you would rather not improvise, the ₱59 Beef & Herb Gravy Mix stirred into that same deglazed liquid is the shortcut version, and the method for it sits in how to cook the sides and add-ons.
Can You Make Pan Sauce From Wagyu Drippings?
You can make a pan sauce from wagyu drippings, but it is usually not worth it. Saikoro cubes and tallow-infused Meltique leave a pan of rendered fat rather than dry fond, so the sauce turns greasy and splits instead of binding. Serve those cuts with a cold sauce on the side instead.
The Special Homemade Wagyu Sauce (₱89) is built for exactly that, dipped per cube, yakiniku style. Heinz A.1. Original Sauce (₱179) does a similar job, its acidity cutting through a rich Meltique. Both stay off the heat and out of the pan. For a whole table dipping that way, wagyu samgyup at home covers the tabletop grill, the timing and how many cubes to buy.
Butter-aged USDA Angus is the opposite case. It renders less, browns harder, and leaves a properly dry, dark fond, which is why this sauce belongs with a butter-aged ribeye or porterhouse rather than with the wagyu.
How Long Does a Pan Sauce Take?
A pan sauce takes about two minutes, which is exactly how long your steak should be resting anyway. Start it the moment the beef comes out of the pan and finish it before you carve. Leave it on the heat much longer and it reduces too far, turns salty, and goes sticky.
Two rules for the finish. Take the pan off the heat before the butter goes in, because butter added over a flame separates. And pour the sauce over the mash or the rice, not over the steak, so the crust you just spent four minutes building stays crisp.
