What to Serve With Meltique Ribeye: Sides for a Rich Steak Night
The Prime Meltique Ribeye is already doing a lot of work before you touch it: tallow infused through the muscle gives it that wagyu-style butteriness on the first bite. That richness is the whole point of the cut, but it also means your sides matter more here than with a leaner steak. Put the wrong things next to it and the plate feels heavy. Put the right ones and it all clicks.
Here's what works alongside Meltique, using what we carry in the range.
The steak
Our Prime Meltique Ribeye is ₱1,449 per pack; the Prime Meltique Giant Ribeye is ₱1,499. Both are tallow-infused ribeye, so the eating experience is the same: rich, lush, and more indulgent than USDA Angus but well under wagyu money. One pack feeds two people comfortably, the Giant more generously if both of you are hungry.
For the searing method, follow the same steps as any other ribeye: very hot pan, patted dry, salt just before it hits the pan, 2 to 3 minutes per side, then rest. The one thing to watch is that the tallow renders more aggressively than natural marbling would, so you may want to tip off excess fat from the pan if it starts to pool. The full method is in the ribeye searing guide.
The starch: plain and absorbent
A Meltique steak is not the meal to pair pasta with. Truffle pasta, pesto pasta, and anything cream-based add another layer of richness on top of beef that is already giving you a lot. Save those kits for the Classic Butter-Aged cuts where the beef is leaner.
Idahoan Mashed Potato (₱219) is the right call here. A smooth, neutral mash soaks up the resting juices without competing, and it gives the fat somewhere to go rather than pooling under the steak on the plate. Mix it plain with butter and a little salt. Nothing else needed.
If you are feeding the whole family, plain rice works just as well and stretches the meal further. Garlic rice picks up the rendered fat in a way that feels completely natural alongside a Filipino steak dinner.
The sauce: lean toward something sharp
The Beef & Herb Gravy Mix (₱59) is a reliable choice, and it works fine here if you deglaze the pan after the steak rests. The Meltique drippings are richer than Angus drippings, so the gravy picks up a lot of flavour. Pour it over the mash rather than the steak itself so the beef surface stays dry and the crust holds.
The more interesting option is Heinz A.1. Sauce (₱179). Its tartness cuts through tallow-infused fat in a way that warm gravy does not. A small bowl on the side lets everyone dip per bite and control how much acid they want. If you have never tried A.1. with a heavily marbled cut, this is the meal to do it.
Pick one. Gravy over the mash, or A.1. on the side. Both at once is one sauce too many.
Vegetables: not optional
With a rich, fatty cut, something green on the plate is not a courtesy, it is what makes the whole dinner feel balanced rather than just heavy.
Mix Veggies (₱79) stir-fried in the same pan after the steak comes off is the simplest answer. The residual fat and fond season them without any extra oil, and the freshness keeps the plate from feeling one-dimensional. Cook them fast over high heat for a minute or two, just enough to warm through with a little colour. Do not add butter or cream, the beef has already done that.
What to skip with Meltique
- Cajun Fries (₱99): fries next to a heavily marbled ribeye is double fat. Save the fries for T-Bone or T-Bone nights when the beef is leaner and the plate can handle the extra.
- Pasta kits: too rich on top of too rich. The truffle and pesto pasta kits are better alongside Classic Butter-Aged cuts.
- Hungarian Sausage or Cheesy Frankfurters: the sausages add more protein to a plate that already has plenty of it. Better for a family table with one lighter steak than alongside a Meltique.
A sample dinner for two
Prime Meltique Ribeye (₱1,449), Idahoan Mashed Potato (₱219), Beef & Herb Gravy Mix (₱59), Mix Veggies (₱79): a full dinner for two at ₱1,806 total. That is around ₱903 each for a steak that eats richer than anything at that price in a restaurant.
