Bistek Tagalog With Ribeye: Sear It First, Sauce It Last
Bistek was built to rescue tough, cheap beef. Hand it a butter-aged ribeye and half the recipe stops being necessary, which is exactly why it tastes better.

Bistek Tagalog with ribeye is the Filipino soy and calamansi beef dish made with a tender steak instead of thin-sliced round, and it changes one thing: you sear the ribeye first and add the sauce last, instead of simmering the beef in it. Sear half-inch slices 90 seconds to 2 minutes a side, rest them 5 minutes, slice across the grain, then toss the strips with the onions and the reduced sauce off the heat. The whole dish takes about 15 minutes of actual cooking, and a 1 kg pack of our ₱1,599 Classic Gold Ribeye feeds three to four with rice. Prices verified September 2026.
What Cut of Beef Is Best for Bistek?
The best cut of beef for bistek depends on how you cook it. Traditional bistek uses cheap, lean round or sirloin sliced paper-thin, then simmers it until tender. A marbled ribeye is already tender, so it skips the simmer, stays pink in the middle, and tastes beefier. The trade-off is price: ribeye costs more than palengke sirloin.
Here is how the cuts we carry behave in bistek:
| Cut | Price | In bistek |
|---|---|---|
| Classic Gold Ribeye, 1 kg, 4 cuts at .5 inch | ₱1,599 | The best fit. Butter-aged USDA Angus, lean enough that the calamansi still reads sharp. |
| Prime Meltique Ribeye, 4 cuts at .5 inch | ₱1,499 | Works, but richer. Add an extra squeeze of calamansi to cut the tallow. |
| Foodlabo Saikoro Steak 500g, 30 to 35 cubes | ₱689 | Cubes cook fine in this sauce, but at that point you are closer to salpicao. |
If cubes are what you have, beef salpicao made with wagyu cubes is the better recipe for them.
Do You Need to Marinate Bistek?
You do not need to marinate bistek when you use ribeye. The long soy and calamansi marinade exists to season and soften lean beef. A marbled ribeye needs neither, and a wet, salty surface will not brown in the pan. If you want the flavour deeper, give it 15 minutes at most, then pat every slice completely dry.
Calamansi is acidic, so a long soak also starts to firm up the outside of the meat before it ever meets heat. That is the opposite of what you want from a steak you paid ribeye money for.
How Long to Cook Bistek Tagalog With Ribeye?
Bistek cooks fast once the beef is a ribeye: sear each half-inch slice 90 seconds to 2 minutes a side on a very hot pan, aiming to pull it at 52 to 54°C for medium-rare. Rest it 5 minutes, then build the sauce in the same pan for about a minute. From hot pan to plate, it is roughly 15 minutes.
For one 1 kg pack you need 1/3 cup soy sauce, 1/4 cup calamansi juice (about 10 to 12 calamansi), 1/4 cup water, 1 teaspoon sugar, 4 cloves garlic, 2 large white onions cut into thick rings, and plenty of black pepper.
- 1.Thaw the pack overnight in the fridge, let the slices sit out 30 minutes, then pat them dry and salt them lightly.
- 2.Mix the soy, calamansi, water, sugar and pepper in a cup.
- 3.Fry the onion rings in a little oil over medium-high heat for about 2 minutes, until the edges soften but they still have bite. Set them aside.
- 4.Turn the heat to high. Sear two slices at a time, 90 seconds to 2 minutes a side, then move them to a board to rest for 5 minutes.
- 5.Drop the heat to medium. Fry the garlic in the rendered fat for 30 seconds, pour in the sauce, and let it bubble for about a minute until slightly reduced.
- 6.Slice the rested steak across the grain into finger-width strips.
- 7.Take the pan off the heat, add the strips and onions, toss for 20 seconds, and serve straight over rice.
Why Is My Bistek Tough?
Bistek gets tough for two reasons: the beef simmered too long, or it was sliced with the grain. Ten minutes boiling in soy takes a ribeye straight past well done, grey and chewy. Slicing along the fibres leaves long strands your teeth have to fight. Sear, rest, cut across the grain, and sauce off the heat.
The same rules apply to any steak, and why your steak comes out tough covers the other two causes, skipping the rest and cooking straight from the fridge.
