How to Check Steak Doneness Without a Thermometer: The Touch Test
Most Filipino kitchens do not keep an instant-read probe, and a half-inch ribeye is cooked before you could find one. What to use instead: the clock, your thumb, and one small cut in the thickest part.

You can check steak doneness without a thermometer using three signals: the clock, how the steak feels when you press it, and one small cut into the thickest part. None of them is as exact as a probe. On a half-inch slice they are close enough, because thickness sets the timing and a thin steak is medium rare at about 90 seconds a side. Prices verified September 2026.
How to Check Steak Doneness Without a Thermometer
To check steak doneness without a thermometer, time the sear first, then press the thickest part of the steak with a fingertip. Raw beef feels soft and wet. Medium rare feels springy and pushes back slowly. Medium and past it feels firm and barely gives at all.
Use all three signals, in this order of trust on a thin slice:
- The clock. The most reliable signal on anything half an inch or under. The butter-aged Classic Gold Ribeye at ₱1,599 comes as four half-inch slices, and those land medium rare at roughly 90 seconds a side on a properly hot pan.
- The press. Good for confirming what the clock told you, and the only signal that corrects for a pan that was never hot enough.
- The cut. Slice into the thickest part and look at the colour. Purists hate this one. It is also the only one of the three that cannot mislead you.
How to Tell if Steak Is Medium Rare by Feel
A medium rare steak gives under your finger and springs back slowly, with no hard core in the middle. Press the thickest part, never the edge. If your finger sinks in and the dent stays, it is still rare. If it pushes straight back and feels tight, you are already past medium rare.
The surface tells you something too. Juice beading on top means the centre is warming through and the steak is close. A surface that has gone from beading to visibly dry usually means you are into medium.
Does the Finger Touch Test Work for Steak?
The finger touch test works for steak as a rough check, not as a measurement. Touch your thumb to each fingertip in turn and feel the pad of muscle at the base of your thumb: index for rare, middle for medium rare, ring for medium, little finger for well done. It puts you inside a doneness band, which is usually all a home cook needs.
The honest limit: the test was built for thick restaurant cuts, and hand firmness differs from person to person. On a 1 to 1.5 inch slab like the Classic Giant Ribeye at ₱1,599, the outside can feel right while the centre is still cold. Thick cuts want an oven stage and a probe, and that is the one case where we would tell you to buy the thermometer.
How Many Minutes Per Side for Medium Rare Steak?
For a half-inch slice, 90 seconds to 2 minutes per side over high heat, then a 5 minute rest off the pan. Thickness decides that number, not grade and not price, so the same timing holds for butter-aged Angus and for Meltique at the same thickness.
If you do end up with a probe, medium rare sits at 52 to 54°C, and the same post covers why a whole cut is safe cooked there.
How to Check Doneness on Wagyu Cubes
You barely need to check doneness on wagyu cubes, which is what makes them the most forgiving thing we sell. A Saikoro cube is bite-sized, so it is done once every face is browned, roughly 60 to 90 seconds total on a hot dry pan. The Foodlabo Saikoro Steak 500g at ₱689 holds 30 to 35 of them.
Sear four, taste one, adjust the heat, then do the rest of the pack. A single thick steak gives you no second try like that, and a 500g pack of cubes is the cheapest way to calibrate your own hand before you judge a ribeye by feel.
We deliver this cold to Silang, Indang, Amadeo and Alfonso, with no minimum order, so steak delivery in Indang can be a single pack. Availability, September 2026: the Classic Porterhouse, Classic T-Bone, Gold Artisan Ribeye and Prime Meltique Ribeye are sold out. Check what is live on the order page.
