Beef Salpicao, Made With Wagyu Cubes Instead of Sirloin

The short answer. Beef salpicao made with Saikoro wagyu cubes changes in three ways from the sirloin version. Skip the marinade, because marbled beef does not need it and a wet surface will not brown. Use almost no oil, because the cubes render their own. And cut the pan time to under two minutes total instead of four or five.
Beef salpicao is garlic, beef cubes, a savoury sauce and a hot pan. It is one of the most-cooked beef dishes in Filipino homes, and it is normally made with sirloin or tenderloin, cubed at home, often marinated for an hour to help it along.
Made with Saikoro wagyu cubes, it becomes a fifteen-minute dish and a considerably better one. Not because wagyu is fancy, but because salpicao's entire technique exists to compensate for lean beef, and the cubes remove the problem it was compensating for.
What changes, and why
Three things, and understanding them is most of the recipe.
No marinade. Traditional salpicao marinates the beef in Worcestershire and soy for an hour, sometimes longer. That is there to add moisture and flavour to a lean cut that has neither in abundance. Wagyu cubes are marbled through, so a long marinade does nothing useful and actively hurts: the salt draws moisture to the surface, and a wet cube cannot brown. Season at the pan, not an hour before.
Almost no oil. Recipes call for a generous glug because sirloin will stick and will not produce fat of its own. Wagyu renders within seconds of hitting a hot pan. Start with the barest film, or nothing at all in cast iron, and let the beef supply the rest. You will end up with more fat in the pan than you started with, which is the point.
Far less time. Salpicao cubes from sirloin often get four or five minutes to get tender. Wagyu cubes need 90 seconds to two minutes total. Cook them for five and you have expensive, sad beef.
What you need
For two people, generously:
- 500g Saikoro wagyu cubes. Foodlabo Saikoro 500g at ₱669, which is 30 to 35 cubes, or NK Foods Saikoro 500g at ₱769, which is 40 to 45 cubes.
- A whole head of garlic, cloves peeled and sliced thin. Not one or two cloves. Salpicao is a garlic dish that happens to contain beef.
- Worcestershire sauce, about two tablespoons.
- Soy sauce, one tablespoon.
- Butter, a small knob, at the end.
- Salt and coarse black pepper.
- Optional: a splash of olive oil for the garlic, chilli flakes, a squeeze of calamansi at the end.
Heinz A.1. Sauce at ₱179 works in place of the Worcestershire if you prefer something sharper and slightly sweeter.
The method
Thaw the cubes overnight in the fridge, sealed. Then get them properly dry. Spread them on paper towels and pat the tops. Every wet cube is a cube that steams instead of browning, and in a dish this fast there is no time to recover. How to thaw frozen steak the right way has the detail.
Fry the garlic first, separately. Low heat, a little oil, sliced garlic, and take it out the moment it turns pale gold. It will keep darkening off the heat. Set it aside on paper. This is the step people skip and it is the one that makes the dish: crisp garlic chips scattered at the end, rather than garlic burnt into the sauce.
Get the pan properly hot. Cast iron or heavy steel, over high heat, until it is genuinely hot. Wipe out the garlic oil and start close to dry.
Sear the cubes in one layer, in batches. This is the rule that matters most. A crowded pan drops in temperature and the cubes release moisture and boil. Two batches of about 250g each beats one crowded pan every time. Season with salt and pepper as they go in.
Give them about 45 seconds on the first face, until deep brown, then toss and give them another 30 to 45 seconds. You are browning the outside and leaving the middle pink. Total time in the pan is under two minutes.
Build the sauce at the very end. Return all the beef to the pan, pull it off the heat or drop the heat right down, then add the Worcestershire and soy. It will hiss and reduce almost immediately against the hot pan and rendered fat. Add the butter and swirl until it emulsifies into a glossy sauce that coats the cubes.
Off the heat for this. If you add the sauce over high heat, it reduces to something salty and burnt in about ten seconds.
Finish with the garlic chips, a grind of pepper and calamansi if you want it.
A note on doneness
Salpicao cubes are usually served browned outside and pink within, which is how the wagyu is at its best. For reference, the USDA's Food Safety and Inspection Service (fsis.usda.gov) sets 63°C followed by a three-minute rest as the safe minimum internal temperature for whole cuts of beef. Cubes cut from an intact whole muscle follow the same logic as a steak rather than ground beef, and pink centres are long-standing practice, but cook them through for anyone elderly, pregnant, very young or immunocompromised. Serve it immediately
Salpicao does not hold. It is a dish to bring to the table straight out of the pan, over hot rice, with the sauce spooned over.
Garlic rice is the traditional partner and it is traditional for good reason. Four things that go wrong
- Crowding the pan. The single most common failure. Cook in batches.
- Marinating. Unnecessary with marbled cubes, and it makes the surface wet.
- Burning the garlic. Fry it separately, at low heat, and pull it early.
- Adding the sauce over high heat. Take the pan off the burner first.
Is this still salpicao
A fair question. Salpicao traditionally means beef cubes cooked hard and fast with a great deal of garlic and a Worcestershire-based sauce, and all of that is intact here. What has changed is the cut. It is the same dish made with better beef and less compensation, which is roughly what happens to most Filipino beef dishes when you stop having to fight the raw material.
