How to Cook Steak on an Induction Cooker Without Losing the Crust

Here is how to cook steak on an induction cooker: preheat a flat-bottomed magnetic pan on full power for three to four minutes, sear a half-inch slice for about 90 seconds a side, then rest it five minutes off the hob. Induction heats the pan itself instead of the air around it, so it climbs to searing heat faster than a gas burner and loses that heat just as fast the moment you dial it down. Can You Sear Steak on an Induction Cooker?

Yes, an induction cooker sears steak properly, often more evenly than gas. Induction puts energy straight into the pan base with no flame curling up the sides, so a heavy pan holds one steady temperature across the whole surface. What it will not do is keep radiating heat once the power cuts.

The honest trade-off sits at the top end. Most countertop units, which is what a lot of Filipino condos and apartments run, cap out around 1,800 to 2,000 watts and cycle the coil on and off at the highest settings to protect themselves. Cast iron smooths that cycling out because it stores heat between pulses. A thin pan cannot, and you get a grey steak with no crust.

What Pan Works on an Induction Cooker?

A pan works on an induction cooker only if a magnet sticks to its base and that base sits flat. Cast iron and carbon steel are the best choices for steak, and magnetic stainless steel is fine. Plain aluminium, copper and most light non-stick pans either will not heat at all or will warp.

Two more things decide it. The pan base should be at least as wide as the coil ring marked on the glass, or the outer edge of your steak sits over cold metal. And a warped base costs you more on induction than on gas, because flat contact is the whole mechanism. Skip non-stick for searing either way: the heat you want here is past what those coatings are built for.

What Power Setting Sears Steak on Induction?

Sear steak at the highest power setting your induction cooker offers, or 200 to 240°C if yours is dialled by temperature rather than by watts. Preheat the empty pan there for three to four minutes, lay the steak down, and leave the setting alone until the crust has formed. Drop to roughly half for the butter baste.

Rub the oil onto the steak, not into the pan. An empty pan at full power will smoke out a small kitchen in under a minute, and a thin film on the beef builds the same crust. Test the pan with a drop of water first: it should skitter across the surface and vanish, not sit there and simmer.

How to Cook Steak on an Induction Cooker, Step by Step

  • Thaw and dry: Thaw in the fridge, then pat both faces completely dry.
  • Preheat empty: Full power, three to four minutes, nothing in the pan.
  • Oil the steak: A thin film of high-smoke-point oil on the beef, salt just before it lands.
  • Sear and leave it: About 90 seconds a side, no poking, no lifting to peek.
  • Stand the fat edge: Thirty seconds on the fat cap, held upright with tongs.
  • Baste at half power: Butter, garlic and a pinch of thyme (₱79 a jar), spooned over for the last minute.
  • Rest five minutes: On a warm plate, off the hob, then slice across the grain.
