Why Is My Steak Tough? Four Fixes for a Chewy Home Steak

Why is my steak tough? Nine times out of ten it was cooked past medium rare, sliced along the muscle fibres instead of across them, or served straight off the pan with no rest. A rushed thaw is the fourth cause. None of these are the beef's fault, and all four are fixable on your next pack. Prices verified August 2026.

Why is my steak tough even when the cut is good?

A tough steak from a good cut is almost always overcooked. Muscle fibres squeeze out moisture and tighten as they pass about 60°C, so a well-marbled ribeye held to well done eats drier and chewier than a cheaper cut pulled at 54°C. Grade cannot rescue heat.

Thin slices punish this hardest. Our butter-aged Classic Gold Ribeye at ₱1,599 comes as four half-inch cuts, and half an inch goes from medium rare to well done in under a minute of extra pan time. The other heat mistake runs the opposite way. A pan that is not hot enough leaves the steak sitting in its own liquid, greying instead of browning, and by the time any crust forms the middle is already past medium. Hot and fast beats warm and slow on any slice under an inch.

Does slicing against the grain make steak tender?

Slicing against the grain makes steak noticeably easier to chew, because it cuts the long muscle fibres into short pieces your teeth do not have to break down. Look at the raw steak, find the direction the fibres run, then cut across them at 90 degrees. Same steak, half the chew.

This matters most on cuts with a visible fibre direction, like a strip or a sirloin. On cube-cut wagyu it is not an issue at all: every piece is already short in every direction, which is part of why the Saikoro packs are the most forgiving thing we sell.

Does resting a steak make it more tender?

Resting a steak makes it juicier rather than genuinely more tender, and juicier is what most people mean when they say tender. Cutting into a steak straight off the pan lets the hot juices run onto the board instead of settling back into the meat. Five to ten minutes is enough.

Rest it on a warm plate, loosely tented if your kitchen is air-conditioned. Do not wrap it tightly in foil, because the trapped steam softens the crust you just spent effort building.

Can the way you thaw steak make it tough?

Thawing does not make steak tough on its own, but a rushed thaw sets up the two problems that do. A pack thawed in warm water or under a running tap goes soft on the outside while the centre is still frozen, so the outer layer overcooks long before the middle is even warm.

Thaw in the fridge overnight, then pat the steak completely dry and let it sit out for 30 to 45 minutes before cooking. A wet surface steams instead of searing, and a fridge-cold centre needs extra pan time that pushes everything around it past medium. How do you fix a tough steak after cooking?

A tough steak cannot be un-toughened, but it can be made pleasant to eat. Slice it thin across the grain, spoon the resting juices back over it, and serve it warm rather than hot. Overcooked beef reads much better sliced thin than left whole on the plate.

If it has gone properly dry, stop treating it as a steak. Chop it into cubes for garlic rice, or simmer the slices briefly in a pan sauce so they carry moisture again. Filipino kitchens have been rescuing beef that way for generations, and there is no shame in it.
