Cooking Steak in a Turbo Broiler: The Filipino Kitchen Workaround

The short answer. A turbo broiler is a halogen convection oven, so it is good at gentle even cooking and bad at searing. Use it as the first stage of a reverse sear: cook a thick cut on the high rack at 120 to 140°C until the interior reaches 42 to 45°C, then finish 45 to 60 seconds a side in a screaming hot dry pan.

A great many Filipino kitchens have no built-in oven and a turbo broiler instead. It roasts the chicken, it does the lechon manok, and at some point somebody asks whether it can do a steak.

It can, in one specific way. Not the way most people try.

What a turbo broiler actually is

A glass bowl, a halogen element in the lid, and a fan. The halogen provides radiant heat and the fan moves it around. That combination cooks things through quickly and evenly, and browns surfaces gently rather than aggressively.

For a whole chicken this is close to ideal, which is why it earned its place in the kitchen. For a steak, the gentle-browning part is the problem. Steak crust needs violence, and a turbo broiler is not violent. It is thorough.

The useful consequence: thoroughness is exactly what the first stage of a reverse sear needs.

Why reverse sear suits it so well

A reverse sear cooks the steak slowly to just under your target temperature, then sears it hard and fast at the end. Most of the cooking happens gently, and the crust happens in the last ninety seconds.

The gentle stage wants even, all-round, moderate heat with air moving. That is a turbo broiler's exact description. The rack sits the steak up so hot air circulates underneath, which is better than a solid oven tray, and the fan means no cold spots.

So the turbo broiler does the part it is good at, and your pan does the part it is not.

Which cuts this is for

Thick cuts, which is the whole point. The Classic Giant Ribeye at ₱1,599 and the Prime Meltique Giant Ribeye at ₱1,499 are 1 to 1.25 inches, two cuts per pack. These are the cuts that genuinely benefit.

Bone-in cuts do well too. The Classic Porterhouse and Classic T-Bone at quarter-inch are thin enough that they do not need the slow stage, so cook those in a pan. But if you ever have a thicker bone-in cut, circulating air handles the awkward shape around a bone better than a flat pan does.

Not the cubes. Saikoro cubes cook in two minutes in a pan. There is no reason to involve a turbo broiler.

The method

Thaw overnight in the fridge, sealed. Then temper on the counter 30 to 45 minutes, still sealed.

Dry the surface thoroughly and season. Salt both faces. For a reverse sear you can salt earlier than usual, up to 40 minutes ahead, because the slow stage gives the surface time to dry out again.

Set the steak on the rack, not the base. Use the high rack so air moves underneath. If you have a small wire rack that fits inside, better still.

Set it low. Around 120 to 140°C. Turbo broilers run hotter than their dials claim and vary a lot between units, so treat this as a starting point.

Cook to about 10°C below your target. For medium-rare, pull it at roughly 42 to 45°C internal. On a 1 to 1.25 inch cut this usually takes 20 to 30 minutes, but the range between units is wide enough that time is genuinely not a reliable guide here.

Use a thermometer. On this appliance it is not optional. Turbo broiler output varies more than almost any other kitchen appliance, and the glass bowl makes visual judgement unreliable.

Rest it briefly, five minutes, while you get the pan screaming hot.

Sear in a dry cast iron pan. 45 to 60 seconds a side, no more. The steak is already cooked through, so this stage is purely about crust. On a Meltique cut, add no oil at all, because it will supply plenty of its own. How to cook Meltique ribeye explains the fat behaviour.

Rest five more minutes, then slice across the grain.

Final temperature should land at 52 to 54°C for medium-rare. For reference, the USDA's Food Safety and Inspection Service (fsis.usda.gov) sets 63°C followed by a three-minute rest as the safe minimum internal temperature for whole cuts of beef; medium-rare sits below that, which is established culinary practice for intact whole muscle rather than a food-safety endorsement. What not to do

Do not try to sear in the turbo broiler by turning it to maximum. You will get a dry grey exterior and a band of overcooked meat under it, without ever reaching real crust. The appliance cannot deliver the surface energy a pan can. This is physics, not technique.

Do not cook a thin cut in it. A quarter-inch slice will be past medium before it browns at all. Thin cuts belong in a pan.

Do not put the steak flat on the glass base. You block airflow underneath and get an unevenly cooked underside.

Do not trust the dial. Use a thermometer in the meat.

Why bother, if you need the pan anyway

Fair question. Two reasons.

The first is the result. A reverse-seared thick steak has an even edge-to-edge interior instead of a grey gradient, and a better crust, because the surface goes into the pan already dry. It is a genuinely better steak than a straight pan sear on a thick cut.

The second is smoke. The pan stage is 90 seconds instead of eight minutes, which in a small kitchen with poor ventilation is the difference between cooking a steak and evacuating the house.
