Alfonso is in the cool farm country just past Tagaytay, an easy same-day route from our prep table in Silang. The weather alone makes it good steak country. Butter-aged USDA Angus or tallow-marbled Meltique comes cold to the house or the farm, ready to sear on a cool afternoon.
